- 4 lemons
- pizza dough (for 1 crust, I hope you make your own)
- olive oil
- 4 teaspoons garlic, minced
- 2 jalapenos, thinly sliced
- 1 red bell pepper, thinly sliced (use the color you have)
- 2⁄3 cup parmesan cheese, grated
- 2⁄3 cup romano cheese, grated
- 2⁄3 cup asiago cheese, grated
- 1 cup parsley, fresh chopped
directions
- Preheat oven to 425°F.
- Grate the peel from 1 lemon. Peel and thinly slice the other 3 and remove seeds. Set aside.
- On a floured surface, pat the dough out, forming a thin 10-12 inch round crust. Brush with oil and sprinkle with the grated lemon peel.
- In a large skillet, heat enough oil to coat the pan over medium heat. Add lemon slices, garlic, jalapenos and bell pepper. Saute for 2 minutes. Spread evenly over the pizza.
- Spread cheese evenly over the pizza and then sprinkle with parsley.
- Bake for about 20 minutes or until the crust is crisp and the cheese bubbles.
- Slice and serve.
