Cheese Oatcakes

"We tried these during a trip to Scotland - our hostess brought them home from a church fete. Served with apple juice, they were delicious - just like a crisp cheese cracker. When we got home, I scoured the internet to find this recipe from Cloisters Bed and Breakfast (Talmine, Scotland), which tastes identical. These are fun to make with kids - roll out the dough and use cookie cutters to make any shape you like."

  • Rub margarine or butter into flour and oatmeal.
  • Add grated cheese and salt.
