Cheese Potato and Kielbasa Hotdish

"Easy slow cooker casserole adapted from Taste of Home's Potato Sausage Supper. I adapted this from the 2 cans of cheese soup to make it lighter but still flavorful. Notes *The cups of milk are an approximate, I fill the soup can with milk to mix then after putting the hotdish in the slow cooker I pour more milk over the top until it just covers the potatoes. *I have been using Cambell's new Cream of Chicken and Mushroom soup"

  • I use a 6 qt slow cooker.
  • Peel and cut potatoes into chunks.
  • for a medium potato that is about 6 chunks. If you slice them too thin the potatoes will turn to mush in the slow cooker.
  • Slice polish sausage into 1/2 inch slices.
  • In a large mixing bow combine potato chunks, onion, 8oz of cheese shreds and cream soup. Add one soup can of milk and stir.
  • Spray Slow Cooker with non-stick spray.
  • Layer potato mix and sausage slices in the cooker, sprinkle each layer with seasonings so the flavor cooks into each layer. Pour additional milk on top until it almost covers potatoes. I top with additional cheese and the bread crumbs.
  • Cook on Low 6-8 hours.

I started cooking when I was seven years old. My grandmother was the kind who grew all our veggies in her garden and never once bought a bakery birthday cake. My father always made his own bread and fabulous soups and stews. My husband is the gardener in our family but we grow our own produce including apples that are considered an extinct speices and plums that make the most beautiful lavender blush jelly. This year I invested in a food saver and it has proved invaluable as we process our garden goodies. I do love to cook and bake. I do some specialty cakes and wedding cakes on the side, my favorite is cupcake Bouquets. I also can my own spagetti sauce, chilli, and beef stew. We have an authentic wood cook stove in our kitchen that is part of the orginal furnishing of our 19th century farm house built by my husand's great-great-great grandfather. We fire it up every year at christmas time to make lefse and usually a batch or two of cookies in it just for fun. We have two kids a boy and a girl who both love to help my cook. We love to camp, revovating our home and careing for our small head of beef cattle, bunnies, Himalyan Cat Lexie, Ellie the terrier mix, Snoopy our new yorkie puppy, Max the bichon, and Wendy a yellow lab/golden retriever mix. I also enjoy painting, writing, planning dinner parties and needlepoint. My favorite dish to cook is crock pot beef roast My husband's favorite is crepes My signature dish is Meatballs with Mash potatoes and gravy. My favorite restaurnt is a local one Mike's Smoke House. I work at United Health Group as a Claims Processer. My passions include animal rescue, reading, and writing. I will not eat liver, brussel sprouts, fish, seafood, cooked cabbage, cooked spinich, lutefisk (scandinavian dish fish pickled in lye) or meatloaf made by anyone other than me.
