Very easy to make. I used another cook's idea to use green chiles in place of the green pepper. I also did not fold the tortilla but used two torilla. I had white sharp cheddar cheese and monteray jack on hand so I used that. There is only my husband and I and this was a good way to use up left over tortillas from a previous meal.

Love this recipe!!! I have had a horrible week at work and wasn't in the mood to cook but ya gotta feed the family. The ingredients are things that I keep around all the time so we had a very yummy no-fuss dinner. I used chopped green chiles instead of bell pepper. I served with chili beans and rice. We were very happy. Thanks.
