  • Sprinkle each tortilla with cheeses, tomatoes, green pepper, onion, salt, pepper, and chili powder.
  • Fold in half and press edges lightly to seal.
  • On a lightly oiled griddle, cook quesadillas over low heat for 1-2 minutes on each side or until cheese is melted.
  • Cut into wedges.
  • Serve with salsa and sour cream.

  1. Very easy to make. I used another cook's idea to use green chiles in place of the green pepper. I also did not fold the tortilla but used two torilla. I had white sharp cheddar cheese and monteray jack on hand so I used that. There is only my husband and I and this was a good way to use up left over tortillas from a previous meal.
     
  2. Love this recipe!!! I have had a horrible week at work and wasn't in the mood to cook but ya gotta feed the family. The ingredients are things that I keep around all the time so we had a very yummy no-fuss dinner. I used chopped green chiles instead of bell pepper. I served with chili beans and rice. We were very happy. Thanks.
     
  3. These were fast and easy to make. I made enough to serve 8 hungry people. I have some pepper-heads in my family so for them, I sprinkled chopped jalapeno with the green peppers and onions. Very yummy. Thank you.
     
  4. I made these as an appetizer for a Mexican themed dinner party. They were wonderul and so easy. All my guests loved them and wanted the recipe. The only addition was to add a little salt and pepper before folding the tortillas over and cooking. Thanks Nurse Di.
     
  5. I loved this recipe; it tastes so good and is easy to make. I didn't have the green pepper but used everything else. I used 2 whole softshells instead of folding one in half.
