Cheese Quesadillas

  • Lightly spread one side of each tortilla with butter; place four tortillas buttered side down on large skillet or griddle (may have to cook in batches).
  • Whip cream cheese until fluffy; stir in onions, tomato and salt.
  • Spread on tortillas in skillet to within 1/2-inch of edge; sprinkle on Colby Jack cheese and jalapeno.
  • Top with remaining tortillas, buttered side up.
  • Cook on medium heat until bottom is lightly browned, about 2 minutes.
  • Carefully flip quesadillas over to brown other side.
  • Remove from heat and cut into 4 or 6 wedges.
  • Serve with sour cream, guacamole and/or salsa.

  2. The cream cheese in these was a nice surprise. I didn't quite cook mine the way the recipe said because I have discovered that the easiest way to cook quesadillas is to use my George Foreman grill so I don't have to worry about turning them. Other than that, I made them as directed and enjoyed them very much.
     
  3. I chose this recipe for the Picture Post Tag game and I'm sure glad I did. These were delicious! I loved the mix of cream cheese, tomatoes and green onions. I made up a bit more cream cheese mixture than was called for as I am a big fan of cream cheese. I served this with tex-mex rice recipe #91598. Thanks Sue L for taking the picture that got me to try these. And Tearanii I thank you for sharing your recipe. It will become a regular around my house.
     
  4. These were pretty good. I made them last night and I left the cream cheese off of one to see if there was a difference - honestly, I didn't notice one. Overall though, my family enjoyed these. Thanks for the recipe!
     
  5. OK Tearanii here`s your first picture! I did pick a 5 star recipe for it but I don`t think Quesadillas make for a good picture. These were delish! I made it for myself for lunch. Using only 2 tortillas. I did use 1 ounce of cream cheese, 1 small scallion, 1/2 tomato, and 1/4 cup cheese. I served it with my pineapple salsa that`s at recipe #67080. They worked great together. This is a keeper. Great for unexpected guest. I usually have these ingredients on hand and very easy and quick to whip up.
