  1. Cut cheeses into 1/2" cubes. Toss with cornstarch and set aside.
  2. Heat oil in a skillet over medium-high heat until shimmering. Add ground beef; saute, breaking up with a wooden spoon, until no longer pink, about 5 minutes. Season with salt, pepper, cumin and red pepper flakes. Stir until fragrant, about 30 seconds.
  3. Add tomatoes and milk. Bring to a boil, reduce to low and add cheese cubes. Stir constantly with a wooden spoon until cheese is melted and sauce is smooth. Stir in hot sauce, if using. Serve with crackers, vegetables and tortilla chips.
