Cheesy Appetizer

"These quick, easy tomato, basil, and cheesy appetizers will be everyone's favorite. They are a quick version of my tomato basil pie. Every time I make them for any holiday or party, they are gone in less than five minutes."

  • Unfold one thawed sheet of puff pastry dough on a sheet of clear plastic wrap or waxed paper.
  • Dice the four tomatoes into small pieces(I usually slice the tomato in half and slightly squeeze the tomato before I dice it so that it isn't too juicy. That's up to you.).
  • Put the diced tomatoes into a medium sized mixing bowl.
  • Tear the 8 basil leaves into small pieces and add them to the same bowl.
  • Add the remaining ingredients to the same bowl.
  • Using a spoon, mix all the ingredients together.
  • Spread the mixture on the puff pastry dough making sure it is even and to the edges.
  • Choose the edge closest to you and roll the dough up so that it is in one tight roll.
  • Seal the long edge by pressing.
  • Chill in the refrigerator for about 15 minutes (You do not have to do this. I just find it's easier to slice and easier to prepare ahead of time and have ready to slice and cook whenever I am.).
  • When ready to cook, just slice the roll into 1/2 inch slices and place them on a parchment lined cookie sheet.
  • Cook in a 425 degree oven for 15 minutes.

  1. I loved the flavor of these. I only used 3 tomatoes that were medium small and removed the seeds and I still had way too much filling. I wonder if the recipe should use both puff pastry sheets. I will definately make them again and either half the recipe or use the filling on both sheets.
