Cheesy Baked Parmesan Tomatoes

"This is a wonderful side dish to any meal, also a great way to use up any extra tomatoes that you might have. The grated mozza cheese on top is only an option, I have made this many times without using the mozza or cheddar cheese, and they are still delicious. Also if desired these may be broiled under the broiler instead of baked, but I find that broiling causes the crust to burn too fast."

  • Coat the tomato slices in the bread crumb mixture (patting down firmly with hands to seal/coat well).

  • Bake in oven for 12-15 minutes; turn over with spatula, and bake for another 12-15 minutes or more or less depending on desired tomato texture.
  • Remove from oven.

  • Sprinkle the grated mozza or cheddar on top of the baked tomato slices; broil under broiler until melted.

  1. Another winner from the talented and amazing Ms. Kittencal! The only thing I did differently was to add some minced garlic and a pinch of Italian seasoning to the melted butter. We loved your recipe, and perfect for the summer crop of tomatoes!

  2. DELICIOUS! I had tomatoes I needed to use and this was a perfect recipe for me-made for a crowd exactly as written w/ mozzarella and everyone loved them! I did take liberty and on the second pan, I included garlic and sauted spinach and they were great, too! Thank you for a wonderful recipe, Kitten!!!

  3. Most excellent!! I'm a tomato-a-holic so it's not odd to think I adored this recipe...but my husband is the type who can take them or leave them and certainly doesn't consider them a side dish or a vegetable. He couldn't keep his hands off this dish before I even got the to the mozzarella part of the recipe! I think he would have liked this dish just as much with or without the cheese. I agree! The breading was wonderful! I used panko and added some Garli Garni seasoning. I added a bit extra parmesan to the mixture as well. I had smaller tomatoes so my dish came out slightly overcooked (but still delicious!) despite my cutting the cooking time a bit. For smaller tomatoes I may go with 9 minutes per side next time (and there will be MANY more times!). This was wonderful! Kitten...you've got an arsenal of great recipes and I can't wait to keep trying them all! Thank you for this one!

  4. We liked these a lot. I had something similar at a party & was glad to find this recipe! I used panko instead of breadcrumbs, and it worked well. Also, used 6-cheese Italian blend. Very, very good!!

  5. I made this to go along with grilled chicken last night and they were great! I loved the topping! This is going to become a regular at our house! We used mozzarella instead of cheddar. Thanks!
