Cheesy Baked Parmesan Tomatoes

- 1⁄4 melted butter, plus
- 2 tablespoons melted butter
- 2 1⁄2 cups dry breadcrumbs (breadcrumbs MUST be dry)
- 1⁄3 cup grated parmesan cheese
- seasoning salt
- black pepper
- 4 large ripe meaty tomatoes, cut in 1 inch sliced
- 1 cup grated mozzarella cheese or 1 cup cheddar cheese (or more if desired)
directions
- Set oven to 400 degrees.
- Prepare a 15-inch cookie sheet with foil, spray with cooking spray.
- Melt the butter in the microwave.
- In a bowl, combine the DRY bread crumbs, 1/4 cup melted butter, Parmesan cheese and black pepper to taste; mix well to combine.
- Brush the tomato slices on both sides with the 2 Tbsp melted butter (you might need more butter than 2 Tbsps for this).
- Coat the tomato slices in the bread crumb mixture (patting down firmly with hands to seal/coat well).
- Place the slices on the prepared baking sheet.
- Bake in oven for 12-15 minutes; turn over with spatula, and bake for another 12-15 minutes or more or less depending on desired tomato texture.
- Remove from oven.
- Set oven to broil.
- Sprinkle the grated mozza or cheddar on top of the baked tomato slices; broil under broiler until melted.
- Serve hot or room temperature-- delicious!

DELICIOUS! I had tomatoes I needed to use and this was a perfect recipe for me-made for a crowd exactly as written w/ mozzarella and everyone loved them! I did take liberty and on the second pan, I included garlic and sauted spinach and they were great, too! Thank you for a wonderful recipe, Kitten!!!

Most excellent!! I'm a tomato-a-holic so it's not odd to think I adored this recipe...but my husband is the type who can take them or leave them and certainly doesn't consider them a side dish or a vegetable. He couldn't keep his hands off this dish before I even got the to the mozzarella part of the recipe! I think he would have liked this dish just as much with or without the cheese. I agree! The breading was wonderful! I used panko and added some Garli Garni seasoning. I added a bit extra parmesan to the mixture as well. I had smaller tomatoes so my dish came out slightly overcooked (but still delicious!) despite my cutting the cooking time a bit. For smaller tomatoes I may go with 9 minutes per side next time (and there will be MANY more times!). This was wonderful! Kitten...you've got an arsenal of great recipes and I can't wait to keep trying them all! Thank you for this one!
