Cheesy Brocco-Polish Macaroni

"This is what I do when the kids want macaroni and cheese AGAIN but I want something a little more mature. I hope you like it."

  • Preheat oven to 375 degrees.
  • Lightly grease an 8" x 10" baking pan.
  • Cook the macaroni until al dente then drain.
  • Chop broccoli into bite size pieces.
  • Quarter the Polish sausage length-wise then slice into bite sized pieces.
  • Fry the Polish sausage until brown then drain off the excess grease.
  • Steam the broccoli until it is tender but still firm.
  • In a large sauce pan melt the butter then add the flour and stir continuously to make a light roux.
  • Add milk slowly to the roux, a little at a time, stirring continuously until thickened and creamy.
  • Add in the American cheese a bit at a time while stirring the sauce until all cheese is added and melted into creamy goodness.
  • Mix the chili powder, garlic powder, dried basil, cumin and black pepper to the sauce.
  • Fold the sauce into the cooked macaroni.
  • (If you have picky kids like I do this is where you can portion out their servings into a covered dish and keep it warm.).
  • Gently fold the cooked Polish sausage and broccoli into the macaroni and cheese.
  • Pour the macaroni mixture into the prepared baking dish.
  • Sprinkle the bread crumbs evenly over the top.
  • Bake for 20 minutes until the top turns a golden brown and the casserole is bubbly.
  • Serve and enjoy!
