Cheesy Broccoli

"Did you know that broccoli has been around for over 2000 years now! And, that over 30,000 plants of broccoli can grow in only 1 single acre of land! NO KIDDING! The word "Broccoli" comes from the Italian 'brocco' meaning- arm branch. Broccoli is a member of the cruciferous family of vegetables, which means that it's related to cabbage, cauliflower and brussels sprouts( the 2 C's are among my favourite veggies!). Broccoli is believed to help protect against cancer and since it is rich in vitamins and minerals, it is known as the "superstar" of all vegetables! YO! Broccoli has as much calcium ounce per ounce as milk or better. It's a super source of Vitamin C and promotes healthy blood and stronger immunity. It helps replenish folate and Vitamin B6 and is also a great source of fiber which, in turn, helps in lowering cholestrol, controlling diabetes and better digestion!   • Steam the broccoli spears until they are crisp-tender.
  • Melt butter in a saucepan.
  • Add the flour and pepper and stir constantly for half a minute, until the mixture is smooth and bubbly.
  • Add the milk and cream cheese.
  • Stir constantly until the sauce thickens and reaches the boiling point.
  • Add cheddar cheese and blue cheese.
  • Keep stirring until the cheeses are melted.
  • This takes anywhere between 1-2 minutes.
  • Stir in the chopped walnuts once and remove from heat.
  • Pour this mixture over the steamed broccoli.
  • Serve warm.
  • ENJOY!
  • TIP: Do not discard the tough ends of broccoli stalks.
  • Use them for making soups.
