This was good, however I made it a second time with homemade cheese sauce and I used thyme. I guess I'm just a prude when it comes to made from scratch meal. (especially if it involves cheese. I will not even touch processed cheese (someone probably fed me to much of it in nursery school or something. I did everything as directed the first time. After changing things a bit it was much more suitable to my taste (but we all have different pallets) DH liked it both ways.

I started this early in the morning so it could simmer for hours. I halved the recipe because I only had 1 can of cheese soup and 1 can of evaporated milk. This certainly isn't the typical clam chowder with potatoes....it's quite different....in a good way. Also, I wouldn't say it looks "horrible" at all. Quite the contrary. It's quite a delicious combination. Kind of like a potato-less cross between New England and Manhatten clam chowder with cheese. I like that Grandfather gives us the option of various seasonings; mine were thyme, and garlic powder. I used fresh onion in place of frozen and butter for margarine, otherwise no changes. I wouldn't hesitate at all to make this again. I hope that Grandfather is still with us so you can tell him that I loved his soup. Thanx for sharing his recipe.
