  1. Preheat oven to 350 degrees.
  2. Arrange the mushroom slices in a shallow casserole dish.
  3. In a small frying pan, saute the shallots in 1 tablespoon butter over medium heat until soft.
  4. At the same time melt 1/2 cup butter over low heat in a small saucepan.
  5. Once the butter is melted add the flour and mix well.
  6. While stirring constantly, increase the heat to medium high.
  7. Cook the flour mixture for 3 minutes, then add the half and half and bring to a boil.
  8. Add the chicken stock, salt, and white pepper and return to a boil.
  9. Add the shallots.
  10. Pour the sauce evenly over the mushroom slices.
  11. Sprinkle with the bread crumbs.
  12. Bake for 20 minutes.
  13. Remove from the oven and sprinkle with the parmesan.
  14. Return to the oven right before serving and bake for about 5 minutes, or until the cheese melts.
