  • beat eggs and add cottage cheese.
  • Stir together.
  • Add flour and butter, then cheese and chiles.
  • Cook at 350 degrees for 30 minutes.
  • Can make ahead and keep in refrigerator uncooked overnight.
  • Great for brunches.
  • Can add other ingredients to jazz it up (mushrooms, onions, whatever suits your fancy).
  • Wonderful to make ahead for family events.

  1. This dish was wonderful. My family loved it, even my two year old. I sauteed some onions and mushrooms and added them to the mix. I used Pepper Jack cheese instead of Monterey Jack. This is definately something that I will make again.
     
  2. HOLY AMAZING!<br/>This was so yummy... I did reduce the cheese to one cup and added sausage... My kids gobbled it down!
     
  3. I would not call 23 grams of fat per serving "healthy" so I cut the cheese in half and used fat free cottage cheese. Came out fine. Next time I might add some Parmesan cheese to give it a little more flavor.
     
  4. Easy and good! The recipe didn't say melted or softened butter, so I just melted. I also used a greased baking dish as it wasn't noted either. I added cubed ham and topped lightly with sharp cheddar cheese for color.
     
  5. I am rating this recipe now, as I need to be able to find it quickly in "my reviews". I make it all the time, have changed it up in numerous ways, and it is always a hit! I have even left out the flour with dh low carbing. Another plus of this recipe is that it doesn't require you to make it the night before, sometimes I don't have that much advance notice. Thanks for sharing this with us.
