  • Soften cream cheese and cream together with soup. Stir in onions, ham, Jack cheese and pepper. Break apart hash browns. Gently stir into cheese mixture. Place in gallon freezer bag. Label and freeze.
  • To serve: Thaw. Place in greased baking dish. Bake covered for 1 hour at 350°. Uncover and top with shredded Cheddar cheese. Return to oven until cheese is melted.

  1. This was tasty (if a little salty - I'm guessing it's the cream of celery soup). The kids and my husband liked it. I would probably add some under cooked veggies just to add something other than carbs, meat and dairy.
     
  2. I made this today, with a lot of changes. First, I used "healthy" request soups (lower in fat and sodium) and also 1/3 less fat cream cheese. I also used 2% cheese and a lot less than the recipe called for. Because the recipe seemed kind of blah, I added chopped frozen broccoli and a good handful of Mrs. Dash garlic and herb blend. Because my bag of hash browns was 30 oz, I also needed more liquid, so I added a can of evaporated milk and when that still seemed dry, stirred in some skim milk from the fridge. I baked a pan of this right away and put the rest in bags to freeze as suggested. Baked straight off with the changes I made, it was very tasty. Serious comfort food! However, even with the healthier soup and the extra veggies, it still seemed kind of salty to me and I added no additional salt. Something to consider if you're on a low-sodium diet. All in all, this was a great base recipe to build on.
