Cheesy Hash Browns

"It's basically just hashbrowns with cheese and mushrooms. I made it up one day and my husband just went crazy for it. Try changing the types of cheese for a different flavour!! If you can't find mushroom and garlic soup, just use plain cream of mushroom and add 1 tbsp minced garlic. makes great leftovers!!!"

  • 0.5 (1 kg) bag frozen hash browns (not the patties, the loose stuff)
  • 1 (10 ounce) can cream of chicken soup, undiluted
  • 1 (10 ounce) can condensed cream of mushroom & garlic soup, undiluted
  • 12 onion, minced
  • 12 cup grated cheddar cheese (I prefer the 'old' kind)
  • 12 cup grated swiss cheese
  • salt and pepper, to taste

  • Put all ingredients in a large oven proof bowl. Mix thoroughly, cover and bake at 350 degrees F. for 1 hour.

  1. These potatoes were good but seemed to be lacking something - it could have been that I just needed to add more salt and pepper because I didn't put very much. As an additional suggestion I mixed the cheeses in with the hashbrowns but also added more cheese on top and broiled it for ~3-4 minutes at the very end.
     
  2. This was good. I left out the onion since I didn't have any on hand (well more like I forgot to buy some LOL) and I just used all cheddar cheese since we aren't fans of swiss. I made this with some BBQ chicken. Thanks for the recipe!

  4. My aunt makes these hash browns all the time, only with Campbell's cheddar cheese soup instead of the mushroom soup. The whole family absolutely loves them - they're so creamy and cheesy, it's hard not to!

I'm a mom and I love to cook. Started cooking when I was 20, and found I love to do it! I love to experiment with new stuff all the time, and I hate prepackaged foods and recipes that use them, so I always try to figure out the ingredients on my own to copy a recipe. I just don't think that opening a can of baked beans and adding something to it makes for homemade beans!!) My husband had a heart attack last year at the age of 39! So now, we try to eat a lot healthier. I am always looking for ways to get more veggies into him. In my recipes, I never add salt, but I post it here cuz I know most people still like the taste. It takes a while, but you get over it when you cut it out of your cooking. We don't even have a salt shaker anymore. Poor guests! I love that when I post something here, I can see the nutritional breakdown so I know what he can and can't have. I've printed all kinds of recipes that I've found here and made up a heart friendly cookbook for us.
