- 1 crusty cobb loaf
- 20 g butter, softened
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 4 slices shortcut bacon, chopped
- 250 g grated cheddar cheese
- 1⁄2 cup chopped parsley
- 60 g melted butter
directions
- Preheat oven to 180°C.
- Place a large sheet of foil on a baking tray.
- Make 5 cuts across the cobb loaf, cutting down to the bottom, but not right through.
- Turn & make another 5 cuts crossways - do not cut through the bottom crust (you want to be able to push the filling into the cuts. but leave the loaf intact).
- Heat butter in a frying pan and cook onion garlic & bacon for 5 minutes until golden.
- Transfer to a bowl. Add 3/4 of cheese plus parsley, stir to combine.
- Scatter mixture over bread and push down into cuts.
- Drizzle with melted butter and wrap foil around bread to enclose.
- Bake for 15-20 minutes, unwrap foil & sprinkle with remaining cheese.
- Bake for a further 10 minutes or until the cheese is melted & golden.
