Cheesy Mexican Chicken

"I like this recipe because its super easy to make, and all of our friends and family love it, its not the healthiest but when your in the mood for cheese its perfect. I have a lot of friends that have made similar recipes, that were ok but one day I just put all the things I thought would be great together in this and we've loved it ever since. Super tasty when fresh but i will warn its not so good reheated afterward. So bring a few hungry bellies to the dinner table."

  • 4 chicken breasts, cooked and shredded
  • 1 (11 ounce) bag nacho cheese flavor Doritos
  • 1 (1 1/4 ounce) packet taco seasoning
  • 12 bottle taco bell taco sauce, mild or hot
  • 1 can rotel tomatos and green chili, original
  • 2 lbs Velveeta cheese

directions

  • Add taco seasoning to shredded chicken according to taco seasoning pkg. in large skillet.
  • While chicken is cooking, add Velveeta, Rotel, and Taco Bell sauce together in a large microwaveable bowl, melt down until their are just a few lumps, making sure to stir often.
  • Preheat oven to 350 degrees.
  • Once chicken is finished being seasoned, add to cheese mixture and stir.
  • Pour the chicken and cheese mixture into a 9x9 baking dish, leave uncovered for about 10-15 minutes, or until just barely beginning to brown a little on the top.
  • Spoon mixture out and pour over a slightly crunched pile of Doritos. Enjoy.
