Cheesy Mixed Vegetable Bake

  • Preheat oven to 350°F.
  • Grease large casserole dish.
  • Combine vegetables, half the pimiento's, soup, sour cream, pepper, half of the onions and half of the cheese in a bowl.
  • Mix.
  • Spoon mixture into casserole dish.
  • Bake for 20 minutes.
  • Sprinkle remaining onions and cheese on top and bake for another five minutes or until melted.
  • Remove casserole from oven and sprinkle with remaining pimiento's.
  • Let stand 5 minutes before serving.

  1. I made some changes but the result was outstanding!! I had a bunch of leftover fresh veggies from DD graduation...so used broccoli, carrots, cauliflower, snap peas...added 1/2 small onion finely chopped, 1 tsp garlic, 1/2 tsp curry powder...doubled the sauce as I pretty much doubled the veggies...used bread crumbs as we are not fans of fried onions, and 1 1/2 cups colby-jack shredded cheese. Baked it in a 9x13 sprayed dish...let it set up about 5 mins...It was a bit on the soupy side...so served with egg noodles...I had hoped for left-overs...but there are none :( Thanks for posting this recipe, I will be making this again for sure!!
     
  2. While this one is not a regular in our routine, it is great for a change. I cut in half for just the 2 of us and have 2 meals worth. I also used frozen veggies to really make it quickly. Good stuff
     
  3. This was well received by my guests. I used frozen veggies and regular cream of mush. soup. I also used cheddar for the cheese. The fried onions really make this dish. Thanks Cynna, for posting. Roxygirl
     
  4. This recipe got rave reviews from my guests and my husband, I didn't use the fried onions and instead of swiss cheese I used Gouda, and I used californis blend veggies which I nuked in the microwave first. This is a definate keeper, I may add potatoes and ham next time.
     
  5. I also used a California Blend frozen bag of vegetables. I cooked them almost compeletly before mixing them in the casserole dish. I also omited the pimiento. Everyone that ate them said they liked them and asked for the recipe. I think next time I'd try regular cream of mushroom. I felt the golden mushroom was too rich. But would definately make this again. It was a quick easy side dish.

  1. Fantastic, quick recipe! My husband decided to go on a reduced-carb diet, and brought home many bags of pre-packaged vegetable medley (cauliflower, baby carrots, broccoli). He got tired of eating them raw, so I used two 12 ounce packages in this recipe. I microwaved the veggies in their bags first (5 minutes), then followed the recipe, except I covered the casserole dish after 30 minutes and continued cooking until the baby carrots were soft. Also, I used a tablespoon of minced onion instead of the fried onions in the mix, and topped the casserole with a few sliced onion. Yummy!!!!
