- 1 lb fresh mushrooms, sliced
- 1⁄4 cup melted butter or 1/4 cup margarine
- 1⁄2 cup chopped onion
- 1⁄4 cup sliced green onion
- 1 (8 ounce) package medium egg noodles
- 2 cups shredded cheddar cheese
- 1⁄2 cup half-and-half cream
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon ground nutmeg
- 1⁄4 cup chopped parsley
directions
- Saute mushrooms in butter until tender.
- Add onion and green onion; cook 2 minutes; set aside.
- Cook noodles according to package directions; drain and return immediately to saucepan.
- Add remaining ingredients except sauteed vegetables and parsley; cook over low heat until cheese melts, stirring constantly.
- Add sauteed vegetables, stirring gently.
- Sprinkle with parsley, and serve immediately.

Perhaps something went wrong in the preparation. I followed the instructions exactly until I put the cheese in. It was too stringy and didn't "sauce up" like it should have. So, I added more half and half, and then a little more until a sauce formed. But, then, perhaps because of the extra half and half, it was just bland. My family ate it but didn't want it again.

Delicious noodles! I made just two changes because I didn't have all the ingredients for the recipe. First, I used 1/2 whole milk and 1/2 heavy cream for the half-and-half. Second, I had to use bow tie pasta instead of noodles. The taste was great! I loved the addition of mushrooms. I had this recipe complete in only 30 minutes vs the 50 minutes stated on the recipe. I'll definitely make this again. Thanks NurseDi!
