- 2 1⁄2 cups all-purpose flour
- 1⁄4 cup yellow cornmeal
- 1⁄4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon red pepper
- 1⁄2 cup parmesan cheese, grated
- 1⁄3 cup dry buttermilk
- 1 tablespoon dried onion flakes, green onion if you can find it
- 1 1⁄2 - 2 teaspoons dried red pepper flakes

- 2 eggs
- 1 1⁄2 cups water
- 1⁄4 cup vegetable oil

- Combine all ingredients and mix them together well.
- Pour into an airtight container, like a QUART mason jar and store in a cool, dry place.
- Decorate as you wish for gift giving
- *DIRECTIONS FOR RECIPE GIFT CARD:* You can copy and paste this but you will have to adjust the spacing etc -- Add 2 eggs, 1 1/2 cups water, 1/4 cup vegetable oil. Place muffin mix in a large bowl and make a well in center of mixture. Combine eggs, water and oil, add to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling 3/4 full. Bake at 400 degrees for 20 minutes. Remove from pan immediately. Yield: 2 dozen.

Nearly 15 years ago, I gave this recipe as gifts to many co-workers along with a bean soup in a jar -- layers of 10 different dried beans, peas and lentils. I called it New Years Day bean soup to be made with V-8 juice on New Year's Day! I loved giving this muffin mix and keeping some for myself. A great gift and a TERRIFIC muffin. Not only is it good in a jar, but it's fun to do in a non-zip plastic bag and put in a largish chinese box -- like the kind you get for chinese takeout. Enjoy! You'll love it. And the buttermilk powder comes in handy for other recipes too!
