  • 2 lbs red potatoes
  • 14 cup butter, melted
  • 12 cup green onion, sliced thin
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 8 ounces sour cream
  • 2 -3 bacon, slices cooked crisp (optional)
  • 1 (10 3/4 ounce) can cream of chicken soup, undiluted
  • 2 cups shredded cheddar cheese
  • buttered breadcrumbs, amount to taste

  • Cook potatoes in boiling water until tender; drain and cool. Peel and cut into 1/4" slices; set aside.
  • Combine 1/4 cup butter and next 6 ingredients in a large bowl. Gently stir in potatoes and cheese.
  • Spoon into a lightly greased 13x9x2 inch baking dish. Sprinkle over potato mixture with buttered breadcrumbs.
  • Bake, uncovered for 350 degrees for about 25 minutes.
