Cheesy Ramen Vegetables

"Ramen noodles are not just for college kids, although this recipe comes from the book, "College Kids Cook" by Carol Field Dahlstrom. This is a filling little lunch dish or snack which has some health benefits along with ease of preparation."

  • 1 (3 ounce) package ramen noodles, discard seasoning packet
  • 12 cup cooked frozen mixed vegetables, of choice
  • 1 tablespoon butter
  • 12 cup cheese, shredded (2 oz.)
  • salt and pepper

  • Cook the noodles in boilling water according to package directions. When noodles are tender, drain.
  • Add the vegetables, butter, cheese and season to taste with salt and pepper.
  • Heat until everything is hot. Serve.
  • NOTE: If you have leftover cooked meat, it may be added to the pot along with the vegetables.
