- 3 tablespoons natural grapeseed oil
- 1 onion (diced)
- 8 ounces mushrooms (sliced)
- 1 1⁄2 cups arborio rice
- 3 cups vegetable broth, low sodium
- 2 teaspoons garlic & herb seasoning mix (Wildtree Garlic &Herb Blend)
- 2 teaspoons spaghetti sauce, spice (Wildtree Hearty Spaghetti Sauce Blend)
- 2 tablespoons Dijon mustard
- 3⁄4 cup grated parmesan cheese
- 1⁄2 cup frozen peas (thawed)
- 1 tablespoon butter
- chives (for garnish)
directions
- Heat Natural Grapeseed Oil in a large pot over medium heat. Add the onion and sauté 5 minutes. Add the mushrooms and cook until browned, about 8-10 minutes.
- Add the rice and cook 1 minutes or until lightly toasted.
- Stir in the vegetable broth, Garlic & Herb Blend, Hearty Spaghetti Sauce Blend, and Dijon mustard.
- Bring to a boil. Cover, reduce heat to a simmer, and cook for 20-25 minutes or until rice is tender and liquid is absorbed.
- Stir in the Parmesan, peas, and butter. Serve, garnish with chopped chives.
