Cheesy Sandwich Buns

"The texture of these rolls is reminiscent of an English muffin or biscuit. Use two to assemble an "egg McMuffin" type breakfast sandwich; or use for a ham sandwich, etc. Don't worry -- these don't taste like coconut. However, I find them a little "eggy" when eaten plain -- yummier in sandwiches. Try variations with onion powder or chives. Low-carb and soy-free."

  • Whisk together butter, eggs, salt, garlic salt, and garlic powder.
  • Combine coconut flour and baking powder.
  • Whisk the dry ingredients into the wet ingredients.
  • Fold in grated cheese.
  • Drop in mounded spoonfuls on cookie sheet sprayed with nonstick spray.
  • Bake at 400 degrees for about 17 minutes, until lightly browned on top.
