Chef Berry's Stuffed Manicotti

  • Preheat oven to 375 degrees.
  • Cook manicotti shells according to package directions (al dente).
  • In a hot skillet add ground beef, mushrooms, onions, garlic, italian seasoning, pepper, and 1tsp salt; cook until ground beef is no longer pink (slightly brown).
  • Remove the ground beef from heat and stir in spinach. Set aside and let cool.
  • In a large bowl lightly beat the eggs.
  • Combine the ricotta, bell pepper, and mozzarella cheese, and remaining salt in with the eggs. Stir together well.
  • Stir in the ground beef mixture until well mixed.
  • In a baking dish add stewed tomatoes and 1 cup of spaghetti sauce.
  • Stuff the manicotti with the meat and cheese mixture and arrange in the baking dish.
  • Pour on remaining sauce and sprinkle on the parmesan cheese.
  • Cover and bake in the oven for 45 minutes.

What can I say, I love cooking. Even more, I love eating. Growing up I was a mamas boy. I spent a lot of time in the kitchens of my mother, aunts, and grandmother, and they all were excellent cooks. There was no way I could spend that much time with those great women and not pick up a thing or two about how to prepare and appreciate food. I love trying and creating new recipes for family and friends. I hope anyone that tries my recipes wil enjoy them as much as I do.
