Chef Mike's Luscious Pound Cake

"My husband loves pound cake, and I am ever in search of the perfect recipe. This is one of my favorites - moist with a verycrusty top. The recipe calls for a 10X4 inch loaf pan, but I bake it in a dark angel food pan."

  • Grease and flour a 10X4 inch loaf pan.
  • Combine sugar, butter and vanilla and cream until fluffy.
  • Add eggs one at a time.
  • Mix on low speed for one minute; and mix on high speed for 3 - 4 minutes, scraping bowl as needed.
  • In a separate bowl combine flour, baking powder and salt.
  • Mix dry ingredients into butter and sugar mixture, alternately with the evaporated milk.
  • When mixed thoroughly pour into loaf pan and bake 45 - 55 minutes or until a toothpick inserted in the center comes out clean.
  • Cool 15 minutes in pan.

I must confess that I do more reading of recipes and planning to make them than I do actual cooking. One reason for this is that I commute into NYC for work and this is a fairly long commute for me. The other reason is that I am a fan of comfort foods and desserts. My husband and I are almost empty nesters (our youngest is away at school, but nearby), and we tend to eat many of our meals in restaurants. However, I am on a campaign to improve my eating habits, and I am interested in finding some healthier recipes that still appeal to me.
