  1. Grease and flour a 10X4 inch loaf pan.
  2. Combine sugar, butter and vanilla and cream until fluffy.
  3. Add eggs one at a time.
  4. Mix on low speed for one minute; and mix on high speed for 3 - 4 minutes, scraping bowl as needed.
  5. In a separate bowl combine flour, baking powder and salt.
  6. Mix dry ingredients into butter and sugar mixture, alternately with the evaporated milk.
  7. When mixed thoroughly pour into loaf pan and bake 45 - 55 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool 15 minutes in pan.
