Chef's Tomato Basil Soup

- 12 cups diced tomatoes
- 4 tablespoons olive oil
- 3 tablespoons basil leaves
- 1 tablespoon salt
- 3 cups water (see directions below)
- 2 tablespoons garlic, minced
directions
- If you are using canned tomatoes, drain the juices into a measuring cup and add enough water to the juices to make 3 cups of liquid.
- In large pot, saute the garlic in the olive oil to sweat them. DO NOT overcook and BURN the garlic!
- Add all remaining ingredients.
- Bring to boil and then turn down to simmer 10 minutes Serve.

Having been born/bred in NJ and moving to WY, I've experienced a lot of change in my life! But cooking has always been a joy. I learned at my mother's knee, as she taught me when I started in high school and she started back to full-time work. By the time I graduated, I was doing most of the daily cooking at home and all my mother's friends were jealous!
I would love to have a decent kitchen, and a decent
'audience" to cook for, but I'm limited by size and a "significant other" who thinks the only thing that's decent to eat is steak and potatoes! Creativity is out the window!
