  • Cook rice per normal cooking instructions.
  • While rice cooks, brown meat and cook onions until tender.
  • Drain excess fat from meat.
  • Combine meat and onions in skillet, and add crushed tomatoes, mushroom soup, bay leaf, oregano, garlic powder, cumin, salt, pepper, olives.
  • Simmer together in skillet until rice is finished cooking.
  • Add rice, and mix all ingredients well.
  • Top casserole with cheese until melted.

  1. Is my casserole supose to be runny before putting it in oven im useing already cooked rice i had left over.not sure if i have enough rice in it

  1. The olives really were a nice touch, but it wasn't really anything we would make again.
     
  2. Wonderful. The green olives really added a nice taste. I think I'd increase the oregano, garlic powder and cumin to 1/4 teaspoon to start with the next time I make this. I cooked 1 cup of dry rice and add all of it by mistake but it did not matter. Still tasted great!
     
  3. I have been looking for Native American recipes for a friend of mine, and what disappointing me about this one is that it is labeled as Cherokee, but it uses several non-indigenous spices (oregano, cumin, pepper, and olives). I was hoping for something a little more authentic Cherokee.
     
  4. I made this for for a group of 23 Native men and boys; they left nothing behind. That says it all. A chef at the feast we attended suggested adding wild rice to the casserole; will definitely try that next time.
     
  5. A friend gave me this recipe years ago. Her recipe called for 1 1/4 cup brown minute rice. After the meat is browned, stir everything together, and simmer 5 minutes before pouring into baking dish. This is a family favorite!

Tweaks

  1. This was great. I used ground turkey instead of beef. I left out the olives and bay leaf and added a chopped green bell pepper. Next time I woudl add more rice and a little more spices. But, overall I thought it was delicious. My husband loved it too.
