Cherry Cocoa Shortbread Squares

"I found this recipe in the 2003 Taste of Home Cookbook. I made this because I wanted a dessert, but was in desperate need to go to the store. So, I began the search for a dessert with the ingredients I had, and found this. It is simply wonderful! It is now one of our favorites!"

  • In a mixing bowl, cream 1/2 c butter and sugar.
  • Beat in flour and cocoa (mixture will be crumbly).
  • Spread into a greased 9" square baking dish.
  • Bake at 350* for 15 minutes or until surface is set.
  • Cool on a wire rack for 15 minutes.
  • Meanwhile, in a mixing bowl, combine confectioners' sugar and remaining butter; beat in milk and vanilla until smooth.
  • Spread over crust.
  • Pat cherries dry with paper towel; arrange over frosting and press down gently.
  • In a microwave-safe bowl, melt chocolate and butter; stir until smooth.
  • Drizzle over cherries.
  • Refrigerate until glaze has hardened.
  • Cut into squares.

I live in Southwestern Indiana with my DH and my DD. I work for a bank part time, and enjoy cooking, gardening, and enjoying life. I love working on the computer. Whether it be for fun, or for work, I enjoy learning more and more. My favorite cookbook would be any of the Taste of Home Recipe Books. I went to a Cooking School they held in our area, and was sold. My SIL bought my first one for me, and I have gotten each one since. My passion is my Lord and Saviour, Jesus Christ. I love serving Him. My next passion would be my family. Beyond that, it could be about anything. I love to try new recipes from Recipezaar :) If I had a month off, I am not sure what I would do. I imagine I would do the things I love, and surround myself with those that I love. I know, not real exciting, is it? But that is what I would love to have everyday!
