- 3⁄4 cup all-purpose flour
- 3 tablespoons confectioners' sugar
- 3 tablespoons butter, cold

FILLING
- 1 egg
- 2 egg whites
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1⁄4 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄2 cup maraschino cherry, quartered
- 1⁄3 cup walnuts, chopped
- 1⁄3 cup flaked coconut
directions
- Preheat oven 350.
- In a food processor place flour and confectioners sugar; cover and process until blended. Add butter, cover and pulse 15 times, until mixture resembles fine crumbs. Press into 9 in square baking pan coated with nonstick cooking spray. Bake at 350 12-15 mins until lightly browned. Cool on wire rack.
- For filling combine the egg, egg whites, sugar, and vanillain a bowl.
- Combine the flour, baking pwd, and salt; add the egg mixture. Stir in cherries, nuts, and coconut. Spread over the crust.
- Bake for 20-25mins or until firm. Cool on wire rack. Cut into bars, refridgerate leftovers.
