Chewy Coconut Cherry Bars

"This is a very 'tasty & showy' treat, which is a staple on my "Christmas" baking list. Cut into small pieces. That way you can have two without feeling guilty. Don't be put off by the amount of ingredients. This comes together very quickly. Almost too quickly : )"

  • Preheat oven to 350*.
  • Combine flour, baking soda, oats and brown sugar.
  • Cut in shortening until crumbly.
  • Press into a 9 x 13 pan, and bake for 10 minutes.
  • Beat eggs, brown sugar and almond extract thoroughly.
  • In a separate cup, mix together the flour, baking powder and salt.
  • Add to the egg/sugar mixture and blend well.
  • Stir in the coconut, cherries and pecans.
  • Spread evenly over crust.
  • Bake for 25 minutes or until lightly brown.
  • Cool completely before icing.
  • Beat all icing ingredients together until smooth and creamy.
  • Spread or over the baked mixture.
  • Cut into squares.

  2. I posting this because I had posted same recepie without frosting and zaar removed it because they say its a duplicate. These are awesome very sweet. Although I would never put frosting on them I think that my teeth would fall out from them bieng so sweet. Dont add frosting in my opinion..........they are fabulous with out frosting!
     
  3. Nice combination of flavors. I used frozen sweet cherries in place of the maraschino cherries. They were quite sweet so I left off the icing. Next time I will reduce the sugar in the crust and filling. Thank you for the recipe.
     
  4. These are lovely gooey bars Diana. I did enjoy them more once we put them in the fridge to chill. All the flavors really bounced. I had a little difficulty cutting and taking them out of the pan. Next time, I will cook them a little longer. Thanks so much for sharing.
