Chewy Double Ginger Squares

- 1 cup brown sugar, packed
- 1⁄2 cup molasses
- 1⁄4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon ground ginger
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon ground cloves
- 1 pinch salt
- 1⁄2 cup crystallized ginger, chopped

Glaze
- 1 cup icing sugar
- 1⁄4 cup butter, melted
- 2 tablespoons lemon juice
directions
- Preheat the oven to 350 degrees F.
- Grease a 13" x 9" cake pan; line with parchment paper and set aside.
- In a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla.
- In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt.
- Stir into the butter mixture until combined.
- Stir in the crystallized ginger and scrape into the prepared pan.
- Bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes.
- Let cool in the pan on a rack for 45 minutes.
- To make the glaze, stir together the icing sugar, butter and lemon juice.
- Spread over the squares while still warm.
- Let cool completely and cut into squares.
