Chewy Double Ginger Squares

  • Preheat the oven to 350 degrees F.
  • Grease a 13" x 9" cake pan; line with parchment paper and set aside.
  • In a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla.
  • In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt.
  • Stir into the butter mixture until combined.
  • Stir in the crystallized ginger and scrape into the prepared pan.
  • Bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes.
  • Let cool in the pan on a rack for 45 minutes.
  • To make the glaze, stir together the icing sugar, butter and lemon juice.
  • Spread over the squares while still warm.
  • Let cool completely and cut into squares.
