Chewy Ginger Cookies

"My mom's friend gave her a batch of these for her 84th birthday there were more than my mom could eat so she gave me some to take to work to share. I had so many requests for the recipe that I just knew they were special. So here it is. I would like to add that despite the review I have made these cookies many times without any problems. The reviewer did ask the community what might have gone wrong and it was decided that because she had used a stand mixer instead of hand mixing the result was a cake like batter. So it is important to note that hand mixing is the method that should be used."

  • Beat together the butter and sugar.
  • Add eggs and molasses.
  • Mix together the dry ingredients.
  • Add the dry ingredients to the wet ingredients.
  • Add in the crystallized ginger.
  • Roll dough into 1 1/2 inch balls then roll in white sugar.
  • Place onto a cookie sheet - do not flatten.
  • Bake at 350 for 10-12 minutes.

  1. I followed this recipe to the letter. The "cookie dough" is the consistency of "cake batter". what went wrong.. Help anybody... Thanx

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
