Chewy Gluten Free Banana Biscuits

"This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original call for 1 C gluten free flour mix with a bit of chick pea flour thrown in. If you use my Recipe #391326, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice tooth feel. :) I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great!"

  • Combine together all the ingredients, except for the bananas, and mix well.
  • Then add in the ripe, well-mashed bananas and mix well.
  • Add a splash or two of water or milk if it doesn't combine well (too dry).
  • Drop onto a greased baking sheet and bake for 12 minutes or until golden brown.

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
