Chex Holiday Cutouts Gluten Free

ingredients
- 11 cups Rice Chex
- 1 (16 ounce) bag large marshmallows
- 1⁄2 cup butter or 1/2 cup margarine
- frosting (to decorate)
- candy (to decorate)
directions
- Butter 15x10 pan.
- Coarsly crush cereal. (To easily crush cereal, place in plastic bag or between sheets of waxed paper, and crush with rolling pin).
- In large microwavable bowl, microwave marshmallows and utter uncovered on High 2 to 3 minutes, stirring each minute, until mixture is smooth. Stir in crushed cereal. Using buttered back of spoon or hands, press firmly in pan.
- Cool completely, about 15 minutes.
- Cut into shapes with 2 1/2 or 3 inch holiday cutters
- Decorate.

I really liked the texture of these compared to that of a regular rice krispy treat. It was fun to cut them out into shapes. I made mine into hearts and took to the closing program of our Vacation Bible School last week. I didn't frost or decorate mine as it didn't seem necessary to me. I ground in some fresh cinnamon and sugar to the butter marshmallow mixture, which I think added some extra flavor. I would enjoy trying this with different flavors of Chex cereal, like the chocolate one. I got about 2 dozen 2 inch heart shapes out of this, but I maybe could have gotten more, if I had cut them more strategically. I popped them in the fridge to cool before cutting and they cut really easily. I used a whole 12.8 oz. box of plain Rice Chex which was a little more than the 11 cups.
