Chex Holiday Cutouts Gluten Free

"This is a recipe I found on the chex website. I have to eat gluten free so I was very happy to find a recipe for something I could cut out and decorate instead of traditional sugar cookies. You can use rice chex, corn chex, or honey nut chex for the recipe. The amount of treats it makes depends on the size of the cookie cutter you use. The cooking time is the time from start to finish."

  • Butter 15x10 pan.
  • Coarsly crush cereal. (To easily crush cereal, place in plastic bag or between sheets of waxed paper, and crush with rolling pin).
  • In large microwavable bowl, microwave marshmallows and utter uncovered on High 2 to 3 minutes, stirring each minute, until mixture is smooth. Stir in crushed cereal. Using buttered back of spoon or hands, press firmly in pan.
  • Cool completely, about 15 minutes.
  • Cut into shapes with 2 1/2 or 3 inch holiday cutters
  • Decorate.

  1. I really liked the texture of these compared to that of a regular rice krispy treat. It was fun to cut them out into shapes. I made mine into hearts and took to the closing program of our Vacation Bible School last week. I didn't frost or decorate mine as it didn't seem necessary to me. I ground in some fresh cinnamon and sugar to the butter marshmallow mixture, which I think added some extra flavor. I would enjoy trying this with different flavors of Chex cereal, like the chocolate one. I got about 2 dozen 2 inch heart shapes out of this, but I maybe could have gotten more, if I had cut them more strategically. I popped them in the fridge to cool before cutting and they cut really easily. I used a whole 12.8 oz. box of plain Rice Chex which was a little more than the 11 cups.
