Chicken Ala Rice Krispies

"Moist and tender chicken with a nice soft buttery coated breading on the outside. I serve this with a side of chicken flavored rice or noodles and vegetable. My husband first flinched when I told him about the Rice Krispies coating, but loved it when he tried it; you would never know it was cereal coated!"

  • In one bowl, mix cereal crumbs, seasonings & flour.
  • Place the melted butter in another bowl.
  • Dip the breasts into melted butter then coat with the cereal mixture.
  • Place into a greased 9x13-inch baking dish.
  • Drizzle remaining melted on top of chicken and coat with remaining mixture if you like extra breading.
  • Bake, uncovered at 400°F for 30 minutes or a bit longer for outside crispiness.

  1. Good recipe. I added some chile powder to the coating mix as well. I also used a butter spray with a small amount of butter for taste. I was really crispy and good. I found the flour was more than needed. Next time I'll cut it in half. Thanks
     
  2. Great recipe. I omitted the flour and used Parmesan instead (son has Celiac). Also added onion and garlic powder to the seasoning.
     
  3. I love this old recipe! My Mom used to make it all the time -- it's a great way to seal in moisture in skinless chicken, but you still need to watch to make sure breasts don't dry out. I'm going to try it with boneless skinless thighs. Interesting, we always thought the margerine version tasted better than butter; a rare thing.
     
  4. This came out really moist and tasty. I took the suggestion about adding a little more poultry seasoning. I served this with corn and lipton cheese/brocoli rice with cresent rolls. Leftovers were good too! Thanks for the great recipe. I'm going to add this to our rotation
     
  5. We really enjoyed the coating. It was a nice change. The only thing I would do differently is too add some extra poultry seasoning next time since we thought it could use a bit more flavor.

  1. really liked this, and my 3 yr old ate it like he hadn't been fed in months! I substituted grill seasoning for the poultry seasoning. I baked it for the amount of time specified. It was not crispy, exactly, but the breading was still very nice. It tastes nothing like Rice Krispies. Very, very good. I will definitely make it again. My son would be heartbroken if I didn't! Sep 26, 2005 ETA: Tried this today with tilapia, and it was AMAZING! The whole family loved it. The cook time was not nearly as long, because the fish was thin and quick-cooking. And I changed the seasonings to salt, pepper, and garlic powder. This is my new favorite way to make fish! Thanks!

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
