  • Heat oil in large pot over medium high heat.
  • Add garlic and chicken, saute until chicken is no longer pink.
  • Add onions and mushrooms, saute until onions are translucent.
  • Add cabbage, saute until cabbage is soft, about 5 minutes.
  • Add chicken broth and reduce heat to medium. Cover and cook about 7 minutes or until cabbage is tender.
  • Increase heat to medium high and saute 2 minutes or until liquid evaporates.

  1. Quick and Oh-So-Easy! My Signifigant other is not a big fan of mushrooms, so I substituted with potato 'medallions' (large russet potato, unskinned, 1/4" thick). Served it over steamed, long-grain white rice, and made a simple gravy from the left-over chicken stock. Deee-lish! I have found our new favorite!
     
  2. Very nice, quick and easy "comfort food" recipe. Like some reviewer,s I thought it needed a little something to make it a tad less bland -- maybe some herbs and/or lemon. But the basic premise is right on the money!
     
  3. Yumm-o! used shredded, precooked chicken breast and tossed it in with the cabbage which i doubled and topped it off with some green onions.
     
  4. My husband went back for thirds. I added some diced green bell pepper, a few wide noodles and a bit of Sriracha sauce. Great comfort food.

Tweaks

  1. Pump up the flavor by browning a couple slices of bacon and using the grease instead of olive oil. Stir the chopped bacon in when you add the cabbage. Instead of broth, use white wine. Add some white thyme and other favorite spices and you have a great dinner.
     
  2. I added spices after the onions were sauteed. Thyme, cumin, paprika and turmeric gave this bland dish an amazing flavor! I skipped the mushrooms this time, simply no room in my skillet.
     
  3. Substitute Chicken Sausage for Boneless Breast. Just run the chicken through the meat grinder with some oats, sage, and salt to increase the flavor potential in the dish. Cook the sausage for about 5 or 10 minutes, add the cabbage right on top after chicken is cooked through.
     
  4. This was delicious! I enjoyed it tremendously. The only changes that I made were to use canola oil instead of olive oil and replacing the salt with a salt substitute.I am so happy to now have a way to make cabbbage taste good without using a lot of fat! Thanks to you my diet just got a lot easier! Thank you so very much for sharing this recipe. This one's a keeper for sure!
