Chicken and Ham Skillet

"Quick alternative to a tuna casserole. Great tasting comfort food that makes everyone think you worked really hard. A great way to use up leftovers! I serve this with a crusty bread and green beans! Hope you enjoy it too."

  • Melt butter, add olive oil.
  • Saute onion and garlic- and mushrooms.
  • Add the cooked chicken and ham cubes.
  • Add the soup and milk- mixing well.
  • Add the salt, pepper, dijon mustard and peas.
  • Mix well and simmer for about 5 minutes.
  • Add the sliced swiss and melt.
  • Once the cheese is melted, add noodles and stir well.
  • Serve and enjoy.

  1. Very tasty! I decided on 5 stars because of its ease and versatility. 8oz pasta was 3 cups uncooked penne for us. I used 1 c. cooked chicken-could have used a bit more. And I didn't have swiss-used 6 oz. shredded Italian mix cheese. Yummy and easy clean up! thanks for sharing this one!
     
  2. It seemd like too much meat, between the chicken and ham..just to much, nice flavor, but it needed something else, or just chicken.
     
  3. Fantastic 'random' supper search! Indeed comfort food. The changes I made was omitting the optional peas and mushrooms. Instead of cream of celery I used cream of broccoli and added frozen broccoli flowerets. Mmmmm..... Thanks Liisa N.!

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
