Chicken and Mango Salad

  • In a large salad bowl combine salad ingredients (chicken, mangoes, tomatoes, bell pepper, green onions, celery, sprouts, and apples).
  • Toss.
  • In a small bowl whisk together vinegar, lemon juice and sugar.
  • Add yogurt to dressing and stir well to combine.
  • Add dressing to salad and toss well.
  • Refrigerate at least 2 hours.
  • Serve on spinach leaves and garnish with sliced strawberries, kiwi, radishes and almonds.
  • Toss.

  1. This is a really terrific salad. I knew I would like it, I just didnt expect to like so very well. Everything is just so harmonious!
     
  2. I was unsure how the sweet fruit would go with the other savoury ingredients in this dish but to my surprise they worked very well together. Because of a supermarket mix-up I ended up having to sub sun-dried tomatoes for cherry tomatoes. On the top I used strawberries, grapes and almonds. Thank you for a great salad that I'll be making again.
     
  3. What a delicious salad with an unusual mixture of fruits and veggies. I used Ataulfo mangoes, the Granny Smith apple, almonds, kiwi and strawberries. I think the celery would go very well with this mix and I wish I hadn't forgotten to include it. Made for Jammin' Java Jivers ZWT5

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
