Chicken and Noodle Stew

- 1 lb boneless skinless chicken
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 - 1⁄2 teaspoon red pepper flakes
- 1 tablespoon oil
- 1 medium onion, finely chopped
- 1⁄2 lb fresh mushrooms, sliced
- 2 medium carrots, peeled and cut into 1/2 inch rounds
- 1 small bell pepper (red, green, pick a color!)
- 4 roma tomatoes, cut into 1-inch cubes
- 1 cup dry white wine
- 1⁄2 - 4 cup chicken stock
- 3⁄4 teaspoon dried tarragon
- 1⁄2 teaspoon dried thyme
- 8 ounces egg noodles
- 1⁄4 cup packed chopped fresh parsley (I used about a tablespoon dried)
- 1 cup frozen peas
directions
- Remove visible fat from chicken and cut into 1-inch cubes. Toss well with salt, pepper and red pepper flakes.
- Warm oil in large skillet over med-high heat. Add the chicken and stir fry just till chicken is no longer pink.
- Remove chicken from skillet and set aside. Reduce heat to low.
- Cook onion and mushrooms in same skillet over low heat, covered, till onion is soft and translucent, about 10 minutes.
- Add carrots, bell pepper, tomatoes, wine, stock*, tarragon and thyme and continue to cook, covered until the carrot can be easily pierced with a fork (about 15 minutes).
- *With the stock, start with about 1/2 cup to a cup and watch to see if you need more - I had to keep adding it).
- Add noodles to the vegetable mixture and cook, covered for about 10-15 more minutes (or till noodles are tender - either cook noodles ahead of time or keep adding stock as needed. if noodles are precooked, just heat through after adding to the vegetables).
- Add chicken, parsley and peas and cook till heated through, about 3-5 minutes.

I thought this was fantastic! I did use some leftover cooked chicken breast I had one hand ofr ease. I just cooked the mushrooms and onions with the seasonings and some added minced garlic. In place of tarragon I used marjoram and it was a wonderful substitution. I ended up using the 4 cups of stock, plus 1 can of chicken broth. The latter I added after added the veg ( I used chopped brocolli) as the broth was nearly cooked away. This is a fantastic light stew and I plan on making it often. I also used 1/2 of an 8 oz can tomato sauce instead of the diced tomato. which is just a personal preference.

We loved all the veggies in this stew and the slightly spicy flavor. I had a 12 oz package of kluski noodles, so I used all of it with 4 cups of chicken broth. I suspect that 1/2 cup would only work with precooked noodles. Like many stews, I bet the leftovers will taste even better. It will certainly be made again.

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year - even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember - they do it the same way they do in the summer - with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains - what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes - I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees - a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now). My kids are my best and constant reminder that perfect timing is something determined by God and not by me, since I wouldn't have dreamed up such a family-planning scheme, and yet it works just right for us.
