- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1⁄2 teaspoon salt
- 1 1⁄2 lbs boneless skinless chicken breasts, cut in 1 inch pieces
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3 firm tomatoes, chopped
- 1⁄2 cup green olives, halved
- 1⁄2 cup ripe olives, halved
directions
- Mix paprika, curry powder and salt.
- Sprinkle over chicken.
- Heat 12 inch skillet, add chicken and brown all sides.
- Remove chicken; add oil to skillet.
- Add onion and garlic; saute 1 minute.
- Add broth, tomatoes, olives and chicken.
- Bring to a boil; reduce heat and simmer 6 minutes.

A very good quick and easy recipe. The only thing I didn't care for and that's a personal preference were the spices. I did not like the paprika and curry powder together, although I like the two spices separately. I love olives and this is a versatile recipe that can be altered to make it more Spanish or Greek. We will have this again. Thanks, Carole in Orlando

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
