Chicken and Peach Salad

ingredients
- 2 1⁄2 ounces cooked white chicken meat, shredded
- 1 1⁄2 cups Chinese cabbage, shredded
- 1⁄4 cup fresh mint leaves, shredded
- 1 small peach, cut into wedges

Lime Dressing
- 2 tablespoons lime juice
- 1 teaspoon olive oil
directions
- Combine chicken, Chinese cabbage, fresh mint leaves and peach wedges in a medium bowl.
- For dressing, combine lime juice and olive oil in a small bowl.
- Toss dressing with salad and serve.

I made this two nights ago and was SO nervous! The combination of flavors seemed so unusual to me, but it looked so light and healthy I had to try it. I trippled the recipe to serve my whole family (2 adults & 2 small children) and used more chicken than called for...there were no leftovers!! With each bite I fell more in love with the flavor combination (the rating started at 3 stars and made it to five by the end of the night :) ). The only tips I would give to future designers of this salad would be to be generous with the peach and be careful not to put too much lime juice in the dressing. My husband thinks this recipe would be good using crab meat too! Thanks for posting, I'll be making this again.

If I make one of your vegetarian recipes and I managed to take a good photo of it, chances are I will blog about it and tell everybody how much I enjoyed it.
