Chicken and Penne Parmesan

"Can also use broccoli in place of asparagus for those that don't like it. My 3 year old grandson gobbles this up. I had tried something similar in a restaurant that was to die for, so found something similar and changed it to my tastes."

  • In 5 quart saucepan over medium heat, melt butter; add chicken.
  • Cook until no longer pink.
  • Add broth; heat to boiling.
  • Add uncooked pasta and pepper, stirring to coat pasta with liquid.
  • Heat to boiling; reduce heat.
  • Cover; simmer 7 minutes, stirring every 2 minutes.
  • Add asparagus, continue to cook another 7 minutes or until pasta is tender and most liquid is absorbed.
  • Meanwhile, in medium bowl, stir together soup, milk and 1/2 cup parmesan cheese until smooth; stir into chicken mixture.
  • Heat until mixture just comes to a boil; sprinkle with remaining cheese.

  2. Loved it! I added fresh mushrooms( like I do in almost every dish) and green onions a few minutes after I threw in the asparagus. I also used low fat soup and added a splash of lemon juice at the very end. It was fantastic...I especially love that it all cooked in one pot! Genius. It's a keeper for sure! Thank you for sharing.
     
  3. This was very good, also as leftovers. I also added some onions and garlic like a lot of others. I also cooked the noodles for about 5 minutes which I think helped too. Thanks for the great recipe, can't wait to make it again.
     
  4. Whole family loved. Very good. I sauted onions & garlic with the chicken at the beginning. Didn't have any asparagus so used broccoli and add some tricolor chopped peppers too. Yum!

  2. This was the first recipe I found on the site and luckily, it just so happens to be delicious. I made it last night for my boyfriend. Like a lot of other people, I substituted the asparagus for broccoli. For some reason, right before I was going to put the broccoli in, the pan started looking pretty dry so I added about a half cup of water to moisten things up a bit. It turned out fine still. My boyfriend raved all night about it and said it was the best thing I've ever made. There were definitely no left overs. I plan on making this dish sometime soon again. Thanks for the recipe.
     
  3. I started making this and then realized I didn't have any cream of chicken soup so I used cream of mushroom. This made it taste more like chicken noodle casserole but was still good. I also used broccoli instead of asparagus and half and half instead of milk. I will definitely try this with cream of chicken next time.
     
  4. Fantastic! My dd has been bugging me to make this all week. I didn't have cream of chicken soup, so I used cream of mushroom. I added a little garlic to the chicken while it cooked. Next time I will use fresh penne as the boxed penne took a little bit longer to cook than the recipe stated (or I could partially cook them in boiling water before adding to this recipe). I also used broccoli instead of asparagus. This was delicious and I will be making it again. Thanks for posting it podapo.
