Ingredients Nutrition

  • 1 12 lbs red potatoes, quatered
  • 1 cup diced red bell pepper
  • 1 12 lbs chicken breasts, cut into 2 inch pieces
  • 1 cup sour cream
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 ounce powdered ranch dressing mix
  • 1 teaspoon garlic salt

Directions

  1. Preheat oven to 350°F.
  2. Blanch potatoes in boiling water for 3 minutes. Drain.
  3. Prepare a 9x13 casserole dish with nonstick spray. Spread the potatoes in the bottom of the dish. Layer the peppers and chicken on top.
  4. In a large bowl combine the sour cream, soup, ranch dressing mix , and garlic salt. Spread over the chicken.
  5. Cover with foil and bake for 1 1/2 hours, until browned and bubbly.
