ingredients
- 1⁄2 cup margarine
- 1 cup uncooked rice
- 1 1⁄3 cups water
- 1 dash garlic salt
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 1/2 ounce) can cream of celery soup
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (2 1/2 ounce) envelope dry onion soup mix
- 3 -4 lbs chicken pieces
directions
- Melt margarine.
- Combine with remaining ingredients EXCEPT chicken.
- Place mixture in a large casserole and put chicken pieces on top.
- Cover with lid or foil and bake at 350 degrees F. for about 2 hours.

My DH raved about this! I used bone-in chicken thighs and made a couple of alterations: added fresh thyme and sprinkled the chicken with Alton Brown's fried chicken seasoning and subbed butter for margarine (don't use the stuff.) Would've given 5 stars, but the butter was way overwhelming, the top of the dish was drowning in butter. Next time I'll cut it back to maybe 2 T. Otherwise an excellent dish, will definitely make this a regular!
