  • Using a blender, blend one drained can of white beans with 1 cup of water until smooth.
  • Saute onions, peppers and garlic in butter over medium-high heat until golden brown.
  • Transfer to a crock pot.
  • Place the remaining ingredients except the chicken and garnishes into the crock pot and cook on low for 3 hours.
  • Add the chicken and keep warm on low until ready to serve.
