Chicken Breasts With Sun-Dried Tomatoes

  • Soak sun dried tomatoes in 1 cup chicken broth for 30 minutes.
  • Cook the mushrooms, onion and 2 cloves of garlic in 2 Tbsp of chicken broth for 3 minutes. Set aside.
  • Cook chicken and other 2 cloves of garlic in olive oil over medium heat until brown on both sides, sprinkling with meat tenderizer and pepper. Add the tomato mixture and simmer over low heat for 10 minutes. Remove chicken from the skillet, slice into thin strips and keep warm.
  • Add pasta to boiling water so it will cook while the chicken is simmering.
  • Combine the milk, cornstarch and basil. Add to the tomato mixture. Boil and stir for one minute. Stir in the chicken and mushroom mixture.
  • Sauce can be served over the pasta, or stir the pasta right in with the sauce.

  1. This was very good and filling. I substituted pork for the chicken and did not add mushrooms. It smelled great and tasted better than restaurant quality. Would definately recommend this dish and make it for friends/family. Bravo!
     
  2. This was quick and easy to make and SO good. Searched for quite some time to find something my Girlfriend and I would enjoy for a valentines day dinner and i really hit the mark on this one. she was extremely impressed so i must thank the one who submitted this recipe. I did change it a bit, but only in that i added more of several things i like, namely everything. lol
     
  3. Truly wonderful! The prep time was reduced considerably. I heated the broth, added the sun-dried tomatoes and allowed them to soak while the mushrooms, onions and garlic cooked. The chicken was pre-cooked, grilled chicken strips and were stirred into the onion mixture. The milk, starch and tomato mixture was added and allowed to thicken. Served over hot pasta with freshly grated Parmesan cheese.
