Chicken Broccoli Casserole

“This is yummy! You can divide this recipe into smaller pans and freeze before baking. I like to take this to potlucks or when someone has a baby, or is ill. Just add a green salad and bread,and dinner is done!”

  1. Boil chicken in large pot of water until done.
  2. Remove and allow to cool.
  3. Meanwhile,cook broccoli in chicken water 5 minutes or until crisp/tender.
  4. Remove with slotted spoon and spread in 9x13 pan.
  5. Cook rice in broccoli/chicken water 20 minutes or until done.
  6. Drain rice and place in large mixing bowl.
  7. Add soups,mayonnaise, onion, salt, and pepper.
  8. Shred chicken into rice mixture and mix well.
  9. Layer over broccoli in pan.
  10. Top with cheese and bread crumbs.
  11. Bake at 350°F until cheese is melted and casserole is heated through,about 30-40 minutes .
