- 2 1⁄2 lbs chicken pieces
- 1⁄2 cup diced tomato
- 1 onion, chopped
- 1⁄2 cup Spanish olive oil
- 1 green pepper, chopped
- 20 mushrooms, sliced
- 3 garlic cloves, minced
- 1 teaspoon salt
- 3⁄4 cup tomato sauce
- 1⁄2 cup roasted red pepper, strips
- chopped parsley
- cooked rice (to serve)
directions
- Heat oil in an ovenproof skillet, and brown chicken.
- Add garlic, green pepper, onion, and saute until vegetables soften.
- Add tomato sauce, tomatoes, mushrooms, salt and bring to a boil.
- Cover pan and bake at 450F for 40-45 minutes.
- Garnish with roasted peppers and parsley, and serve with rice.
