  1. Heat oil in an ovenproof skillet, and brown chicken.
  2. Add garlic, green pepper, onion, and saute until vegetables soften.
  3. Add tomato sauce, tomatoes, mushrooms, salt and bring to a boil.
  4. Cover pan and bake at 450F for 40-45 minutes.
  5. Garnish with roasted peppers and parsley, and serve with rice.
