Chicken Chow Mein or is It Chicken Chop Suey??

"What's in a name...=) This recipe is an old favorite from my Mom. She called it Chicken Chop Suey and served it with Chow Mein Noodles. I don't know the difference...hence the name. Either way, I like it!"

  • Pour oil into a preheat pan or wok.
  • Add onions and celery.
  • Cook until tender.
  • Stir in chopped cabbage and scallions and cook for one minute.
  • Remove vegetables from heat and set them aside.
  • In a large sauce pan under medium heat, simmer chicken in water/broth until thoroughly cooked.
  • Remove chicken from broth and set on a plate to cool.
  • When cool enough to handle, remove chicken from bone and chop into 1 1/2 inch pieces.
  • Add cooked vegetables and chicken to broth.
  • Add (drained) bean sprouts and water chestnuts to broth.
  • Sauce: Add all ingredients to a small bowl and whisk until smooth.
  • Add to chicken/vegetables.
  • Cook, stirring constantly over med/low heat until slightly thickened.
  • Serve over rice.
  • (Chop Suey?).
  • Or serve plain with crunchy Chinese noodles on the side.
  • (Chow Mein?).

  1. Delicious! I also added mushrooms, fresh sprouts instead of canned, some finely chopped fresh brocolli, garlic powder, ground ginger. And used Wondra in place of flour/cornstarch. Served over white rice, with the crispy noodles on top. Yum! Hubby loved it, too. Thanks for sharing.
     
  2. I made this last night and it was outstanding; I changed a few things mostly just added more veggies and one small can of mushrooms and served it over white rice. no matter what you add to this recipe you can't go wrong.
     
  3. After trying several recipes, my boyfriend said I finally got it right with this one. I used 4 cup homemade chicken broth and added 1 can drained baby corn, 1 can drained straw mushrooms, 1 4 oz jar of pimiento, and 1 can drained bamboo shoots. Definitely use fresh bean sprouts! Served with rice cooked in chicken broth. Had to freeze the leftovers for another meal, or the boyfriend would have gobbled it all up!
     
  4. I added slice of ginger root,soy sauce and 2 smashed garlic cloves to the poaching liquid for the chicken. It really bumped up the flavor.
     
  5. I made this last night for supper. I used boneless chicken breasts because that is what I had on hand and I didn't have the cabbage, I forgot to pick it up at the store and wasn't going back. I used about 1 1/2 cups of broth and I found that was still way too much. Next time alot less broth/water. But otherwise very quick and easy to make and the flavour was good. As well I prefer more crunch so as some have done I will add some carrots and fresh bean sprouts. But on the whole it turned out well.

  2. I added snow pea pod's and mushrooms. I also cut up and sauteed chicken instead of boiling.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
